choosing right board for kit car gear air shifting system + dashboard


hello,

so use motorcycle engine oem electronic plus aftermarket system allows quick shift sensing gear lever moved , killing engine (also traction control engine rpm, fuel/air self tuning etc). in end air shifting system separated system witch control 2 air valves/solenoids gear shifting up/down, wanna add dashboard , use inputs system need arduino.

i need take few inputs engine:
-rpm
-gear position
-water temperature (should simple sensor)
-voltage (should simple)
other inputs:
-wheel speed (magnetic sensor)
-air pressure on air system (should simple sensor)

all these stuff need shown on lcd/oled.

also have on mind:
-real time programmable led lights flashing specific rpm
-real time programmable delay gear shift up/down after press switch up/down each gear
-real time programmable auto shifting of each gear, if reach xxxxx rpm automatically shift up
-down shifting limiter, if rmp high system not allow downshift , overturn engine
-make system work way upshifting , down downshifting since motorcycle have 1-n-2-3-4-5-6 gearbox

im new on stuff, have pretty head mathematics willing learn whats needed project , coming projects :) asking choosing right board (or maybe there better alternative arduino) project , maybe starting points source. due, read theres not many information uno.

*plus have on mind controlling real time brake balance shaft electronically servo motor
