more information on load cell wish measure useful, i'm guessing outputs reading in analogue format, need kind of adc (analogue digital converter) read load cell.
adc's available in range of accuracy ratings measured in bits,e.g. 8 bit adc capable of measuring 256 discreet intervals between bottom of scale , top of scale, 10 bit adc measure 1024 values , 12 bit adc 4096 values. more accuracy higher price.
connection method between loadscale , adc depend on way loadscale outputs analogue value.
connection between adc , pi depend on adc choose, typically i2c or spi used.
